There are tons of tab to play the melody. Does anyone specialize in the backup and fills for popular country songs?

That's kind of a loaded question, i.e. what's a popular country song?

Try searching for specific songs in the Tablature section - Jeff Garden for example has done a number of tabs that feature/contain fills, turnarounds, etc.

Check out Mike Headrick. Mike has some of the best fills for many popular country songs and have a modern sound, too.
