I've recently delved into the 10 string non pedal world and am exploring various tunings. Can someone explain to me why the usual pedal steel C6 is C F A C E G A C E D, while alot of non pedal tunings I've seen do not have the low CF or a high D?
I've also thought of trying a split tuning using 5 strings each and having the middle string be common to both tunings. Any words of wisdom on these thoughts?

Most non-pedal guitars are usually limited to 6, 7 or 8 strings. There is no room there for the extra notes you are citing.

I really don't see any need for 10 strings on a non-pedal steel. I have more than enough to keep me busy with 8 strings.

point taken. So perhaps turning a 10 string into 2 discrete 6 string tunings (with a middle string shared) would be like a double neck in one. I'll have to try it sometime to see if its useful or if I keep longing for more strings on one tuning or the other.

Mr. Anderson has a 12 string tuning that goes (I think) from hi to lo D-B-G-E-C-A-G-E-C-A-F-D. The 1st and 2nd string D and B fall betwen the 4th and 5th and the 5th and 6th strings respectively. Try his website. I've heard he does teach.

Seeing the recent, unhappy news about the excellent Mr. Morrell has reminded me of the 10 string E13 that he was able to get so much out of. There are 10 and 12 string players out there. They are few and far between. But the ones I've heard are terrific players.
