I've been struggling to get a good sound out of this all analog drum kit. It's supposed to have a nice, natural woody sound...but I'm not hearing that.
Ever felt like just burning your instruments out of frustration?

You need a good tone wood like maple or birch.

Really, it is all about seat time... keep practicing; it will come to you.
You will get the sound you are looking for by changing the drum set color to Black. Black just sounds better.
It is all in the hands... but you still need a good ax!
Woodshedding, that might help!
A good "processor" might help.

Try switching to Ludwig drums. Ludwig drums have a more mature sound than Pearls since Ludwig drum shells are tighter and produce a sound with more (tree) rings.

Put some SM 57’s on ‘em… they will really start smoking!

I have a kit just like that. I've never had any problems, Chris.
Just close-mic the snare and toms with SM57s in the usual fashion and you'll be fine.
