What is the point of asking for an MP3/vid to hear and judge a lap steel when the sound is subjected to so many variables? The player, the amp, the EQ setting, the effects, the style, the microphone, the recording gear, the ambience. the listener's personal taste etc. etc. How can one judge other than to say it looks nice?

Josh on another thread pointed out a Dynalap which must cost peanuts against some steels around today but it sounded wonderful, Purely on the basis of that video I suspect that if we could all get that sound we need never spend more than $500 but we all know that there was much more to it than just the steel.

Sound samples or full song recordings are about the only way to get an estimate of what something sounds like. Obviously everything you mentioned can affect the sound but there is nothing else to compare with unless you can find another of the same model to compare.

However, if you can't be there to try it out yourself then you have to rely on sound samples.

If, for example, you were considering a Gibson Console, and you knew what they sounded like, the sound sample would let you at least know that the pickup/electronics in the guitar are working. As long as the electronics are working then you can concentrate on the actual condition of the guitar.
