Dan - you might consider using Confor foam. I used 1" of green firm topped with 1" of blue medium and it came out perfect for me. If it was good enough for our Apollo astronauts it should be good enough for me.

I bought a pair of these stainless knobs (10-32 thread) on Amazon. The knurled knob is one inch diameter and easy to grab and spin.The large size makes them hard to fall through floor cracks unless you really play in some dives.
