I have a gazillion fonts. Several I'd like to use with the arrows, hearts, symbols, etc. How do I add a symbol to a sentence?
For instance..I'm typing up this telemetry class info sheet and I need arrows to indicate increase and decrease. How do I insert them in the text?

If you have the fonts installed, most wordprocessors have an option to change to a different font. You would just select the new font you wanted and then type whatever keyboard character corresponds to that character.
If you have MSWord97 (or probably later) it has an option for special characters without having to have extra fonts. Just click the ? help function and type in what you want to do and the help fuction will give you instructions. I've used that several times to get arrows, Ohm (omega) sign, etc.
I used to work with WordPerfect and I seem to remember it also had similar functions.

In Word97, under the heading "Insert" you will see a topic called symbol. Click on that and it should open a box for symbols and also list different fonts that you can use to apply them. Little bit of playing around with it will probably give you what you are looking for.

There is another option. Under Start|Programs|Accessories|System Tools look for Character Map. This handy thing will show you what the characters for each of your installed fonts look like and have a cut and paste capability.
