You're going to get a lot of replies about using distortion boxes (with the hard to find Boss Tone being the most recommended). You play 2 strings in unison (alternating one then the other) but slightly out of tune so they start "beating", turn up the verb and turn down the treble. This gives the illusion of a strings sound.

I actually got tired of the adjustments I had to make every time I wanted to use the effect (a real pain in the butt if you wanted to use it and play steel sounds in the same song) and finally just bought a synthesizer. You can buy really decent sounding ones for strings and horn sounds at Circuit City, Best Buy, etc for only a few hundred bucks.
