In general terms, can someone just clarify for me what a higher or lower number on the pickup corresponds to? Is a higher resistance number brighter/darker/hotter? Essentially, what sort of sound change would you be reasonable to expect in varying ohm numbers?

It is my understanding that the lower the # the brighter (and maybe thinner) the sound.

I have just gone to that link that was posted and when I read Jerry Wallace's post, I said,

"now THAT is good". It is the best synopsis of DC resistance versus impedance (and all it applies) I have EVER read. And I taught it for years.

So a tip of the hat to Jerry for a superb review of what has often become a very subjective subject.
