I've been using StringJoy strings for a while now for my standard and baritone guitars. They don't have an option for pedal steel presently, but they do offer custom gauge sets. I just ordered a set of standard nashville gauges that I put in their set builder. I'll let you guys know how it goes when they arrive!
Anybody done anything similar? I may try something similar with the Gabriel Tenorio string co.
If anyone wants to give the StringJoy thing a try, I used their 12 string set, plugged in my 10 e9 gauges and then grabbed 2 extra 3rd strings.

I've ordered custom Stringjoy standard guitar sets and also tried a 12 string C6th set with good results. I've gone back to using pretty stock string gauges on steel so I'm currently back to using NYXL sets, they're hard to beat, but String Joy is comparable. Those are the only 2 brands I'd use on any of my guitars. Great tone, stretch out fast, and are long lasting.

Do they offer stainless and nickel wound?

I use SJs on my guitars. I like them a lot. Scott is a very hands on guy and they do their own strings in house in nashville tennessee.
No, they don't offer stainless steel sets. Only Pure Nickel or Nickel wound for electric guitar far as I know.
Check 'em out here.

An update for those curious:
StringJoy does, in fact, work and sound great! They do need to be cut down quite a bit because they come long enough to fit just about any guitar without having to special order a length. I think it's pretty standard to cut down steel strings though. I have to cut mine prior to winding because i play an old 'bud rnb where that's just a must.
I was initially worried about the strings not holding up very well to stretch but they still play as new after about a week and a half of daily play. Haven't had to switch out a 3rd string yet.
