The local monthly open mic has a one hit wonder theme this time. I know Santo & Johnny had other popular songs but would they be considered one hit wonders with SW? thx

Depends on your definition of "one hit".
S and J had 5 other recordings that made the top 100 on the Billboard charts.
None of those other 5 got higher than 23. You decide if that's a disqualifier.
Offhand, I'd think there are better candidates if you have a pretty strict definition of "one hit".
The song certainly is a "wonder" though--one of the 3 or 4 most memorable instrumentals of the entire 50s decade.

Santo and Johnny's 2nd big hit in 1959 was "Tear Drop". Which I think is even prettier than SW. They also had success with "Caravan","Twistin' Bells" , "I'll Remember", "Hop Scotch". All which charted on the Billboard Charts.
So, NO! Santo and Johnny were not "One Hit Wonders"

I say, if you want to play Sleepwalk at the One Hit Wonder open mic, just go ahead and do it. Put the onus on the listener to do the research to prove you wrong. Nobody's gonna bother...

Nobody knows that Santo and Johnny had more than one hit.

I'd play "The Star Spangled Banner," a.k.a. "To Anacreon In Heaven." I don't know of any other hit tunes from The Anacreontic Society. Might catch some criticism for not standing up when I played it, though.
