Since Joe Wright uses 3 finger picks, would his techniques bundle have anything to offer a 2 finger pick user?

Absolutely. Just do the thumb and first two fingers of each exercise regularly and you'll get a LOT out of them. Better yet, put on the third pick and get started; better late than never....

Actually Joe teaches mostly thumb+2 picks in his video material, but does give great advice for using 3 in the "My Approach" book. That book is a sleeper, there is SO much great stuff in there...

I couldn't live without the 3rd fingerpick, as there are so many great voicings that require 4 picks. Even if you only use it for chords, it is well worth getting used to it (it doesn't take long). The difference in attack between strumming across with your thumb and picking is like the difference between "rolling" an arpeggio up or down the piano as opposed to attacking all the notes at once.

Ask Reece about the gains you can get!
