I want to run an adapter cable from my Nashville 112 XLR line out to the line in on the back of my computer, should I use a 1/8 mono or stereo jack?

The jacks on a PC are stereo. The Line In is a stereo input. As the XLR is a balanced 600 ohm output (Mono signal) you will need an adapter to convert it to a standard high impedance "unbalanced" signal. And then an adapter to the 1/8" stereo.

If there's a headphone out on the back, I'd try that. The cable would then be a simple 1/4" stereo to 1/8" stereo.
