Do you prefer to record live with a band or add steel track separately after other tracks are down ?

I'm a huge fan of live recording as it really is the only way to see what your band sounds like, as a live band.
Many track by track built band recordings sound great, but are impossible to recreate on the bandstand.
With that said, If it is a track by track recording, 100% of the time I request to be the last instrument recorded. ime, This is the best way to avoid any tuning clashes.

There are advantages for both methods. In the early days of Nashville, the tracks were recorded live. I asked Hal Rugg one time and he told me that the interaction among the players really helped create the magic. Overdubbing parts took longer to "get in the mood".

I have a small studio in my home and can not record everything at once, but do it in layers. The results are good and we are able to duplicate what we record on stage because we don't add anything that we can't provide at a gig.

I have recorded our band at a live performance with Pro Tools. We had a video guy just place a camera stationary to capture the video. Here is a link to one of the videos. The audio is primarily a mix from Pro Tools with just some reverb added to the steel and vocals. We left a little of the camera audio to capture the room noise.

Compare that to the demo's on the website and you will see that IMHO they are pretty close.
