Jack,
As far as I know, there are only two stores on the east coast where you can walk in and sit down to 30 or 40 different pedal steels and find all the accessories that go with them:

Billy Coopers Music, Orange Virginia

Steel Guitar Nashville

There is a little shop down in Pennsylvania called Wally's Sales and Service, but I don't believe he has much inventory.

I have in my music store individual strings, finger and thumb picks, Dunlop tone bars, a Williams set up and ready to play, and lots of steel guitar BS with I dispense freely to whoever will listen...

You might also want to try Nothern Kingdom Music, (Dana Flood) he is a steel player and has lots of steel guitar related items in stock, including steel guitars.

Steel Guitars of Canada, in Colborne, Ontario, directly across the lake from Rochester, NY,
is only about 2 hours from the New York border.

Directions, and much more info is at
http://www.steelguitarcanada.com

Al Brisco has been providing excellent service to the Steel Community for decades.

He has a large stock of guitars and accessories in stock, even a new Jackson and ShowPro.

His used stock is impressive too, due to trade-ins.

Well worth the trip.
