Nickle wound strings are a little quieter and mellower sounding. Stainless steel wounds are brighter sounding and last longer. The unwound strings are all the same. Cobras are similar to stainless steel.

Comparing Jagwire stainless to Jagwire nickel, it's easier to change pitch on the stainless wound string. That means that your pedal and knee lever movement can be shorter/easier.
Before you assume that that is a good thing, remember that it also means that tuning problems such as cabinet drop are also a little worse with stainless strings.
I think the difference is about 20% (no very much).

I've been using Jagwire nickel wound strings on my Mullen for some time now. Great strings. I just tried a set of Jagwire stainless wound strings and love them even more. The wound strings have a bit more crispness in tone.
