One of the best cooks, Dean Dobbins. I spent a week at his house and ate like a king who had the best chefs.

Farris,
I try to grill or smoke some kinda meat every Saturday. I usually cook enough to munch on through Sunday night. I love to cook and much better at it than playing the steel or so my family of 5 thinks. Never had enough left overs yet to make a sandwich on Monday. I claim a great breakfast and lunch menu as well. Learnt from my Momma how to make "Cathead " bisquits and "SweetPotatoe" cornbread from scratch. The wife and I (together) put up pickles, preserves, pepper sauce and vegetables every year.

Speaking of all the things ya'll have eaten reminds me of my younger days in Alabama. When I was a tot, the whole family traveled and sang and my daddy preached. We never had the money to eat proper like some did. Many times we cooked and eat anywhere we could pull off the road between Florida to Ohio to Louisana. I have watched many times as he prepared squirrels, gophers, possums, quail, chitlins, hoghead cheese, pigsfeet, and other stuff that I didn't even know what they were. I have churned many a turn of cheese, wrung chicken necks, milked goats, wrestled a pig or a turkey to the ground, strung a hog or a deer to a tree branch and also went hungary many nights to bed.

I remember one evening about dust we hit a deer while driving down a dirt road in south Alabama. We all got out and prayed a thanksgiving to the Lord for sending it our way. Before we got through praying, the thing got up and run off.

Thank God for my blessings. Lord willing, I plan on buying my meat from Publix from now on.

Hello Doyle,and Savell,man don't we live in a great nation.USA,thinking about all that stuff you are talking about!i love those cat eyed drop bisc.we never traveled much,my dad was a farmer,one thing,might not could pay or bills some times,but we sure did eat good.those sweet potatoes,oh boy,got some at publix for Thanksgiving,baked em on grill in foil.sweet as sugar.man that had to be hard after praying,thanking the Lord for that deer,then seeing it run off!!WOW,next time sit on it huh!we never rang the chickens neck,it was my job with a hatchet,to chop on the chop block.we would butcher 100 fryers at one time.we still talk about that,dipping them in the boiling hot water,and pulling those feathers.ha ha that was some good eatting.always had meat in the freezer.and the darn milk cow.OH BOY,she hated me,and i did her toooo.

FERRIS, YOU ARE GOING TO HAVE TO START A "PROGRESS" OF " PUNISHMENT" COLUM.....YES CHASING COWS AT THE BREAK OF DAWN, WHEN IT WAS COL AND RAINING. ONLY ONE PLACE THEY WOULD STAND, THAT WAS IN THE BIGGEST BRIAR PATCH THEY COULD FIND , I WOULD HAVE TO GO IN AFTER THEM AND DRIVE THEM OUT ABOUT A MILE TO THE BARN..... "GOOD OLD DAYS" ???????? I MUST HAVE MISSED THEM..... jENNINGS............

Jennings, looking for a frost on sugar cane,then it will be sweet,grind it,cook off syrup.oh man,cane syrup and flap jacks!fixing to squeeze some oranges,fresh O J. sure like to try some of that sweettator cornbread Savell talks about.bet thats as good as crackling cornbread! I can cook man!... better than my wife![shh]... Look at my last name!... We[Italians] can all cook! Just an hour or two ago I served my wife and two of my boys Chicken Parmigiana,meatballs and a side of spaghetti. I am very good at times,REALLY bad at others. Real consistency lacks,but I have some good stuff in my recipe catalog.

BOB,i like a man who likes to live on the edge.I take it that wife doesn't read the forum,huh.You gotta watch it thou,women love men that knows how to cook.Why they will let you do it all! I just had some fresh Vension came in,trying to figure how to cook it the best.i love it fryed,but seems to always be tough.wondering about browning it good,then load it in the crock pot and let it slow cook.It's hard to chew when you don't have good choppers.mabe i'll try some like that,and throw in some potatoes.i'll tell wife it's beef,see how it goes. Jennings wish i could send you some,you'd know what to do with it.huh. WOW, can't wait. farris

Ah cooking wives... almost a thing of the past...
if they aren't mothers too.

I did all the cooking the 1st 5 years together, she did about 6 meals the whole time.

Farris, she's french, she NEVER did hotdogs,
except when she was an aupair in Calfornia.

Jennings... unfortunately not everyone has access to possum broth. I have done a possum stew in NH. though.

The ex, She had only one recipe I ever used, liver and onions fried in olive oil, finished with rasberry vinegar. But once she did it once I ended up doing it.

I love a good pheasent,
done with an fuji apple and cognac flambé reduction sauce,
and parsnip purée done with browned, almost burnt garlic, bouquet garnie, salt n pepper
a hint of herbs de provence, and moistened with the juice from cooking some shalots (before putting them in the stuffing).

I do a pretty good Duck a l'Orange too,
or with a thick pear/ white wine sauce.

I can do that Balinese spicy orange, sweet thick soy sauce for duck or any bird.
I had an Indonesian aunt who 1st taught me some advanced cooking back when.

If you mix chinese hoisin sauce with porto and simmer a bit with shalots till they turn translucid,
it makes a great baste for any game bird.
A bit lighter than a peking duck, but similar.

David,all sounds so good,well,i hear the Xpart to,my first wife couldn't even cook tomatoe gravy,lumps of flour burned,no man should have to eat that kind of crap!well,2nd did better,she made yeast rolls, ect.man one word of advice,try womans cooking before marrying them.my daughter cooks green beans,pours hot water over them,ready to eat,not me,i want them seasoned, and cooked for awhile.needless to say, i don't go there much.hell with the sex part, but their cooking is important!!

well,sat night,fire going in smoke house,Pork got 2hrs.on them,all smelling good,got 3 airboats went to lake this morning. sticking frogs, getting ready to clean frogs,frog legs,can't hardly wait for the guys to get in!!hate to clean them,but do love those fryed frog legs!all is fine if don't have to see the frogs looking at you in the morning.those eyes blinking at ya,there goes the last nights supper.well tonight we eat ribs i think.smoke from smoker smells so good, and i'm kindda hungry. Thinking about Christmas already,what we gonna fix.sure need so good receipts!!!want something good. bring it on guys. whats good???? farris

I know I am in france,
when on a friday night and I have cleaned out the shelves and never made it to the store,
ALL I can only find for dinner is :
escargo ( snails in garlic/parsely butter )
and frogs legs...
and I put the frogs in a Marseiles bouliabase soup...
Just ate the snails direct from the micorwave...

I once in Conn. I was cooking frogs legs on an hibachi in barbique sauce,
when a 19 year old Barbie doll fanatic girl came in to the yard .
She saw the legs roasting away and had a coniption fit.
I nearly cooked myself laughing so hard.

This will probably be lost in translation, but I find venison is too dear* and I can't afford it.
Aberdeen Angus ribeye steak with a brandy and peppercorn sauce is our favourite.

Ron,you got me slobbering just thinking about that.David,know what is like to clean the cabinets out,been there,a friend of mine brought me some stuffed porkchops about 1 1/2inchs thick,man that was the best i've ever ate.don't have any idea i'll get over there Ron,so just eat some nice and slow for me.David,i laughed when you told about the girl,i fixed some hooping crane breast one time,daughter came home from school,i said don't ask just eat.she said daddy thats good,what is it?end of story.ha ha,Had nephews stayed with us one time for a few days,fryed vension,no way would they touch it.next night we had fried steak, man was it good...dam,i'm getting hungrey!!! farris

Sunday,5AM,Thank the LORD for a wonderful night.jump out of bed,git to smokehouse!MAN!Ribs have been in for 12hrs,this time i did a little different,washed them,didn't put any seasoning at all,put them in smoke house for about 3hrs.almost done,but tough,wraped them in foil,added more wood,left them in for total of 12hrs.Just let them steam in that foil!opened one up awhile ago,bones just pull right out!!i like the old way,cook em done in about 1 1/2hrs.they are pretty,and red.but getting old,can't chew them like that.Well,Looking forward to a Great Sunday,Weekend!!I always enjoy weekends.course i could set around bored if i choose to,gotta keep things going that we enjoy!I hear kids saying,I'm bored.give em something to do,besides going.Hey teach em how to COOK,not just junk food.course we like to roast a hotdog over a open fire,put them on palmetto sticks,after hotdogs,roast marshmellos,see who can burn the most!!very hot!!Well,hope each one has a great weekend!Yep,make the best of it.now,time to practice, farris
