Here in my part of LA (San Fernando Valley) there are very few Country establishments, but one in Chatsworth has live music at least 6 nights a week, and I think all 7. Many of the bands do not have a full time steel player but from talking to them, virtually all of them would like one. If I played more than three chords, I could be sitting in more often than I could stand. That particular place is packed almost every night. Unfortunately it's not a big place. I think the area could handle a second club with live music if the place was done right. There is a lot of line dancing (yuck) but it's all music that can take a steel.
Additionally, there are the unique sessions that Mike Perlowin and Ernest Bovine do that are not country at all.
There are options for players even in this area. It depends on how much you really want to play.
