Hello to all my friends,yep computer blew,i about to go nuts,well,i loaded it in truck,went to town,i handed the man 100.00 dollar bill,said fix it now.amazing how money talks,they dropped everything,jumped right on it,less than 1 hr,i was fixed up.you guys kindda got me hooked,can't stand to not see whats going on.I would like to personaly thank RON,he called me from away over there,to check on me.WORDS cant express friends like that.anyway,THANK YOU RON. after we talked,i said thats it. loaded and went to town. now, since i spent that 100 bucks,looks like i got to find some wild game.I got a couple wild rabbits in the yard,wonder how i can fix them for christmas?ever heard of rabbit and stuffing? Old rooster better watch his butt huh,can't believe got 3 tomatoes for 4.00,thats unreal,if farmers were getting that fine, but no!!!may be salads for Christmas, but not tomatos!!!well, getting close guys!tell us what you gonna cook??

well,it's CHRISTMAS eve,cooker is going,getting warmed up for tomorrow!so thankful to have computer fixed,i missed all you guys for 2days,RON told me he would take over for me,MAN that scared me!!we all know how he cooks!!might have ruined everones dinners!!ha ha,Jack i hope ya'll doing fine,have a great CHRISTMAS.lets get it going guys!remember we gotta eat that stuff to. farris

Well I can't decide... is it
Wild Boar or Venison... DANG, tough one.
I got a bit of both for tomorrow lunch and dinner..
Either case with a yougurt / veal essence and black truffel,
liver friendly sauce. Maybe a touch of clementine orange peel in there too?
And slightly burnt parsnip / shallot puree on the side.
I am under orders for a completely different diet in general...
I can periodically do more classic stuff, but right now, my inventiveness is being out to the test.
How to do tasty food with many classic ingredients verboten..
Fortunately I have developed many sauces with fruit instead of sugar based things,
but still a new design criteria for a new life I guess.
Lookin gforward to seein all the X-mas dinner menues posted Saturday evening.

PS. these are SOUTHERN venison steaks,
not the more useful, far northern, flying cousins.
I guess most people never do picture Santa's sleigh,
being pulled by 8 slathering wild boars..

Jennings,David,Ron,Jack,and all,you guys are the greatest!!Man,what a day today has been,people came hadn't seen in a year,brought food,WOW,my Daughter brought a large pan of DIRTY RICE,with mushrooms ect.she knows i love that stuff!and also,a big jumbo CARROT CAKE!!all dressed up for the dance!Ham is baking, SISTER is boiling a big fat chicken hen,tomorrow she makes 2 big pans of stuffing!Thank GOD for another wonderful CHRISTMAS.ok, good nite to all.

Damir,that is a bueatiful bird man!!so pretty and light brown.David you making me hungry too!weather has gone to pot here,raining bad,very dreary day!guess we will be eatting later.right now to nasty!I can just imagine those Phesants Jack is smacking on.you guys are the Greatest!!

Faris,
Kandy is in Florida soaking up the sun so I am left alone to take care of the 150 ducks, 13 goats, 7 pot belly pigs, 1 horse, 30 chickens, 2 geese, 2 peacocks, 5 dogs, several rabbits, a guinea pig and a few neighbors.
Snowed in here in southern Indiana so can't get to the store so I'll probably be cooking one of the above.
The ducks are half froze in this sub-zero weather so it's no problem to coax one of them onto the hot outdoor bar-b-que. <G>
Have a great New Year. It's been fun reading all of the replies to your post.

Hey DAVE,DON'T let um lie to you man,aint no sun in FL.nothing but gloom and rain!!well i have a friend in KY.says 18 inchs snow there,so i guess your in the same boat huh,i just can't believe DAMIR showing that turkey,wonder if his wife cooked it?mabe he's just carring it to the table?Thanks DAVE it's been fun to watch the response!must not be to many steelers cooking huh.that figures, lazy rascals,waiting on things to get done.huh,sure been a nasty day here,got to work on roof,lots of leaks today,since the 3 storms we had.but i guess we are lucky to have a roof,since so many don't. Thanks for all the responce guys.

It is raining here, but that's not so unusual,
a white christmas here is practically unheard of.
Did salmon with truffels and walnut oil for dinner, and basmati rice with brussel spouts in garlic /shallots.
I would really like a bite of the smoked pheasant though!
Wonder if a drumstick in a ziplock bag would make it through FedX and customs...
labebled as tympany drum stick?

Yeah Farris, I guess I am likely the only steeler on the planet,
with a jar of truffels in the fridge needing to be used.
If i get this video gig in Feb, in Thailand, I expect to get some serious Thai food cooking lessons, and hands on practice.
I have 2-3 recipes in my head, Saté, Tom Kar Gai, spicey peanut sauce, but I'll get a lot of direct from the source ideas then.
Don't worry I can do down home too. I actually have a small smoker in storage in the USA., it just never made it over here.
I have a buddy on Cape Cod, with a smoker that has a liscence plate on it, so he can go to parties... that's fairly serious!

Well I had not seen the disaster when I post this last.
Horrible scenes, I have not heard today one way or another if we are cancelled, delayed or what.
But it is heart rending for all those folks down there.

Good Morning David! Man my heart goes out to all down there.we didn't know a thing until last nights news.we were just sitting around rubbing our bellys,no idea,others were suffering like that.Well,let us know if you will,what goes on. I would like to say this has been such joy in this cooking steelers thread!! Thank each one for their parts,i've had lots of emails,and fun!

How many gonna have the smoke boiling on new years??am i happy,just ordered a whole hog,dress about 150lbs.for new years.my mexican family who lived next to me for 5yrs.taught me a lots,we gonna cook a hog!!all we need is the fire works!!what a night we are looking for!!hell we may even steel some!!probaly get a little drunk toooooooo.
