It seems removing the horseshoe pickup is the only way to make access to the volume pot. Is this right? If yes, would it simply be taking out four small slotted screws, two each at the side of the thumb screws, and pulling out the pickup assembly? Any risk? To replace the pot, what would be the proper resistance, 200k, 250k, 500k or 1meg?

Thats correct ...
But first make sure you take off the knob ...
Then remove the retaining nut from the existing volume pot and 1/4" jack ... and push them both back into the cavity of the pan.
Then lift the entire assembly out as one unit.
As far as potentiometer values ... its a personal choice:
250K will be mellower than 500K ... 1 Meg will be the brightest ...
Alot of the early ones used 100K ... but personally I feel that rolls off too much high end.

PS: If you find the pan filled with a black resinous material ... try not to disturb it ...
Or you will be sorry (stinky stuff ... creosote like stuff).

Wow! it's a great advice, Mr. Frypan. Thanks a lot.
BTW, would you also advise how I would get an octagonal shaped Frypan knob or any look-alike?

I have an Excell JB Frypan - but I don't like where the tone knob is. I have thought about putting a dual concentric pot where the volume pot is and having vol and tone live there - but all I can find is 500K dual pots. What difference will that do, if the original tone pot is 250?
And on another note if I only had one pot (like some of the early fry-pans had) what happens to the tone then - is it full open or full closed or can I set it (with the understanding that it will stay that way because I don't have a potentiometer for it any more)
