If one was to purchase an amp head how would you know what ohm speaker cabinet to get or if you already have a speaker cabinet, how important would it be to buy a head to match that speaker? I just wondered when someone shows up with an amp head and someone else has a cabinet if they bother to see if they match?

Most all amplifiers have a minimum speaker load specification. Some amplifiers require that that minimum load spec be adhered to for proper amplifier operation, however, some amplifier will work fine without a speaker attached. All Peavey solid state amps will operate fine without a speaker load), and certain tube amps will work without a speaker load, but it is not advisable to do this.

However, some amplifiers have output taps that allow the amp to produce full power into a specified speaker load. Check the operating guide of the amp in question.
