does anyone have knowledge of a source for old school Carousel Knobs, like you'd seen on a 1936 National Electric Hawaiian, or Epiphone Electars of the same era?Cream or dark brown...

They come up on eBay from time to time. Those knobs were also used for radios, so search for "vintage radio knobs" or similar.
The late Tom Pettingill created a guitar for me based on the 1938 Recording King AB-104. I wanted that vintage vibe, and was able to snag a couple of those knobs.
Tom was one of a kind...

The ones he uses on the frypan replica I think he makes himself. They look a tiny bit different than pictured but might be what you're looking for...

I also bought a pair on Ebay a while back. There not exactly like the original but I think they look fine. They are bakelite radio knobs the cost was $12.30 They are not common, just keep looking and you'll find them sooner or later.
