I am trying to figure out what material these rollers are made from. They are not magnetic but also don't seem to be aluminum. Could they be stainless steel?

They were steel

They are 304 stainless, comparable to modern ASTM-A240 chromium nickel varieties. which give good machinability and reasonable resistance to rust or corrosion.
