My personal favs are "One Step More (from earth to Heaven)" and "What A Friend We Have In Jesus/Mother". Both of these are easy to play and slow. You can really make it 'cry' regardles if played on a lap or psg.

Life's Railway to Heaven, the Jeff Newman version, is a great steel piece. Its the intro song on his E9/B6 U-12 video.
