Some early Willie Nelson cuts showed up on YouTube. Who's playing steel? "Why Are You Picking On Me" sounds like Buddy Emmons to me, but I'm less certain of the others. Also Emmons? Or maybe Jimmy Day?

I think those are all part of the "demo" recordings with Jimmy Day.
Willie did about 35 songs in this batch and they were released on dozens of budget label LPs in the 80s and into the 90s. They were not issued at the time of the recordings (early 60s I think). I don't think they have ever been captured on a single CD issue in the CD era.
Below is a list of these demos, but it may (?) not be complete.
Actually, I think it's Jimmy singing on "I Didn't Sleep A Wink", rather than Willie.
There is a Nelson/Day CD called "Crazy: The Demo Sessions" from 6 or 8 years ago, but that's another group of recordings.
