I start out on the twelfth fret with [ C E G C A ]. When I go back two frets to me it sounds like a C7th chord. Yet when I check it I have [ Bb D F Bb G ]. I can see where the dominant seventh sound comes from but why am I hearing what I think is a C7th chord?

Thanks in advance;

Sherman, when you play a Gm7th chord with a C bass...

Bb is the dominant 7th
F is the 11th
G is the 5th
D is the 9th

So now you're playing a C11 which is a substitute for C7

I'm sure you know that if you move up 3 frets instead of moving down (and don't play your C string), then you have a C7 chord with no 3rd tone.... Notes are C,G and Bb
