Let's form a list of musicians that could play everything.
First on the list has to be Barbara Mandrell.
She is truly amazing.
I have two others to add, ones you would never think of, that I have read could play everything (but I have my doubts they could play steel too):
Aretha Franklin and Bobby Darin

I have two old band mates that graduated.
One, James Voris plays 17 instruments
at proper jazz levels,
he played 12 in one song when I played with him.
Stood on a chair to play contra bass sax.
And any Berklee 4 year composition major.

Charlie McCoy comes to mind first. He's recorded on percussion, multiple wind instruments, piano, guitar, bass, probably organ, and probably more.
And Richard's right, lots of people play several. This list could go on a long time.
Some others that come to mind:
Buddy Emmons plays steel guitar and bass. Guitar too, I think. and COULD play no telling what else if he tried.
Russ hicks plays steel guitar, trumpet and guitar.
Mark O'Connor plays Fiddle, guitar, and mandolin, (all with remarkable skill).
Benny Carter was most well-known as a great alto sax man, but also played trumpet, multiple reeds, piano, and was a great arranger.
EDIT #1: Oh, and another guy that comes to mind: SHUGGIE OTIS. He played guitar, bass, piano, and I'm not sure what else.
Edit #2: Also, Ian Underwood.
Edit #3 Oh! and one of my very favorite artists, Jon Hendricks, can function as various instruments (most notably, bass) but uses just his mouth. And at one time, he played drums. (Many other jazz singers get very horn-like sounds from their voice).
Edit #4 And how could I forget John Hartford? Banjo, Fiddle, Guitar, Mandolin, and probably more.
