You can, but I believe steel specific strings have flatter windings to cut down on bar noise.

Wes Montgomery's recording of this was the first piece I ever transcribed for guitar, and I've wanted to hear someone do it on steel for a while.

I hosed mine with PBlaster and spun the key with a winder and it was a little better.
YMMV.

This just came out. I wish it had knobs instead of the touch sliders, but it looks promising and not quite as pricey as the Strymon.
